WILMINGTON, N.C. (December 7, 2017) — A time-honored tradition will soon be renewed in Wilmington! Owner Bobby Zimmerman today announced that he will introduce True Blue Butcher and Table, a butcher shop and full-service restaurant, to Cape Fear-area residents in early 2018.

True Blue Butcher and Table is a completely unique concept for the thriving Wilmington culinary scene. Located at The Forum, 1125-A Military Cutoff Road (formerly Pembroke’s), this new venture will feature one of the more distinctive menus in town, from a brand that is built on the exceptional feelings people experience when it comes to food.

“When I began this process, the first thing I knew for certain was that I want our customers to have a feeling of trust when they walk into True Blue,” said Bobby Zimmerman, owner and executive chef at True Blue. Good food and a positive atmosphere are strong emotions for people. Our goal is to build the kind of place that people are excited to bring their friends to eat and shop at, because they know they will be well-taken care of here.”

True Blue will feature breakfast reminiscent of Parisian corner bistros, within a modern organic but stylized esthetic. A focus on simplicity coupled with the distinction of perfect ingredients will be found throughout the morning menu.

The theme continues into lunch where customers will find made from scratch toasted sandwiches, gratins, broths, and vegetable dishes prepared each day by True Blue’s culinary artisans. Customers will enjoy simple, quick, affordable meals, along with the personal service and attention to detail one would expect from their favorite neighborhood hang-out.

Dinner at True Blue Butcher and Table is an experience to be enjoyed by everyone in the Cape Fear region, during which everyone in attendance knows they will be well-served.  The menu features a wide array of dishes, from snacks (two-three bite-size portions), cheese and charcuterie, small and shareable plates, main courses and a full dessert menu. The dinner menu features perfectly aged steaks and chops, delicate seafood, and decked out vegetables.

In addition to the full menu offerings, True Blue boasts the most exciting raw bar menu in town, featuring local and imported oysters, tuna, and wagyu beef sashimi along with a variety of accoutrements. Guests can enjoy this menu at half price as part of the “Raw Bar Happy Hour” Wednesday-Saturday between 4 p.m. and 6 p.m. On Wednesdays, guests can also enjoy True Blue’s signature Bacon Cheeseburger, a mouth-watering, twin patty masterpiece that is sure to become a restaurant favorite, for only $7 with a purchase from the beer, wine, or liquor menu.


On Sunday, a full service “Brunch & Bubbles” menu will be offered À la carte. Classic preparations and new interpretations will showcase a seasonally- inspired menu. Following brunch, True Blue will host a “Sunday Supper” seating. Patrons can enjoy an abbreviated menu of snacks, small plates and raw bar options or choose from one of three full meals.

However, unlike any other restaurant in the area, True Blue also features an in-house butcher counter on premises. “The Butcher’s Counter” will be a prime destination for retail shoppers, showcasing premium cuts of Certified Angus Beef and USDA Prime as well as American and Japanese Wagyu. True Blue’s in-house butcher will be on hand to assist in selecting and hand-cutting the perfect size and cuts of beef for home cooks. The Butcher’s Counter will also feature an expertly selected assortment of artisan produced cheeses, charcuterie, house made pastas, pastries, and local and imported specialty goods.

True Blue Butcher and Table is hosted by owner and Executive Chef Bobby Zimmerman. A staple of the Wilmington culinary community since 2007, Zimmerman trained in New Orleans and the Midwest before relocating to the Port City.

“The mission behind True Blue Butcher and Table is to bring back the romance between artisan and neighborhood,” Zimmerman said. “The artisan enriching his community patrons with his trade secrets is a deeply meaningful connection to me. I have spent my entire life surrounded by amazing food and even more amazing food people. There are not many things better than sharing an appreciation of food with your friends, family and neighbors.”

The Butcher Counter at True Blue Butcher and Table will be open daily, beginning mid-January, 2018, from 8:00 a.m. – 6:00 p.m. Additionally, True Blue’s restaurant will serve customers at the following times:

  • Breakfast: Monday – Sunday, 8:00 a.m. – 11:00 a.m.
  • Lunch: Monday – Saturday, 11:00 a.m. – 4:00 p.m.
  • Dinner: Wednesday – Saturday, 5:00 p.m. – 9:00 p.m.
  • Brunch: Sunday, 11:00 a.m. – 3:00 p.m.
  • Sunday Supper: Sunday, 3:00 – 9:00 p.m.

True Blue Butcher and Table also features a full bar with a handcrafted menu, an individual carry out menu, and in-home and event catering.
